Geranium is a 3 Michelin starred restaurant in Denmark, run by Chef Rasmus Kofoed (the first chef in the world to have successively won bronze, silver and gold at the Bocuse d’Or, and Chef of the Year by the Danish Food Guide) and Søren Ledet, who was originally co-chef but evolved into sommelier and manager. Geranium was also awarded Restaurant of the Year 2012 by the Danish Food Guide, No. 1 of the “66 Best Restaurants – Nordic Countries” in 2016, and No. 2 in the “World’s 50 Best Restaurants” in 2021 The Geranium kitchen, open to the restaurant, allows an osmosis between the chef, his brigade and customers, thus seeing the ballet of dishes evolve to the final result: plates that restore, challenge and enrich, all through balanced preparations. With a very clean style, going to the essential, this book takes us into the world of this exceptional organic restaurant. The restaurant has built its reputation through a focus on local ingredients and inventive techniques.
